Since going gluten free 6 years ago I’ve found it difficult to find recipes for things like cookies that I want to bake and enjoy myself. Which is also more confusing when I also need to have them dairy free.
So, I totally hit up Pinterest to check out some gluten and dairy free lactation cookies. With paleo and grain free diets being more popular I’ve started to find more options out there. Most of these recipes have you using a nut butter of some kind, which I wanted to avoid since they can get pretty expensive. I tried a few out and then came up with my own recipes. Because I basically use recipes as guidelines and then come up with my own!
I brought some into the Best Friends Breastfeeding Support Group at Hendricks Regional in Danville, IN to do some taste testing. We got two thumbs up! ???? And I got to see lots of cute little babies.
I can’t always go by what my children like as we tend to eat lots of new things and they love just about anything. Plus they are notorious cookie thieves, and the left over cookies didn’t last long.
I couldn’t wait to share the recipe with you! I also have a nut free version that I will be sharing tomorrow.
- 1 1/2 C. Gluten free quick oats.
- 1 C. + 2 tbsp Blanched almond flour
- 1 C. coconut sugar or succanut
- 2 heaping tbsp of Brewers yeast (Lewis Labs brand is gluten free)
- 2 Tbsp ground flax
- 2 eggs
- 1 Tbsp Gluten free vanilla (or homemade)
- 1/2 tsp Himalayan pink salt
- 1/3 C. unrefined coconut oil
- 1/4 tsp aluminum free baking soda
- 1/4 tsp GF baking powder.
- Additives (Optional):
- 1 cup GF/DF chocolate chips or
- 1 cup raisins
- Preheat oven to 350º
- Combine ingredients and add additive of your choice.
- Mixture should be sticky.
- Place on cookie sheet using tablespoon sized balls of dough.
